The real star of this dish, if you ask us, are those delicious, pan-fried, pink oyster mushrooms. Seriously, these things are way better than french fries. We’ve gone over how to cook pink oyster mushrooms before, but we’ll give you a quick little refresher course.
Grab your favorite frying pan and add a little butter or avocado oil and warm it on medium-high heat while you separate out the fans. Fry until golden brown. Remove from the frying pan and place on a clean paper towel to drain off some of the oil. Immediately sprinkle with salt to draw out that delicious, bacony flavor, and enjoy with a spicy aioli.
