BBQ is the ultimate summertime meal, and while we are personally partial to chicken š, pork š, and beef š , itās always fun to try something a little adventurousā like this BBQ pulled mushroom sandwich.
Lionās mane mushroom is packed with nutritional content and is even showing promise as a potential treatment for degenerative brain conditions. Itās also delicious. Itās buttery and slightly sweet, and when you fry it up alone in a healthy amount of butter, they take on a mild seafood-like flavor. Some say it tastes like crab! š¦
Its flaky texture makes it perfect for shredding up, and the way it absorbs flavor makes it incredibly versatile, especially as a meat substitute. We recently tried it out for ourselves in the form of a tasty BBQ sandwich, and letās just say we should have doubled the recipe. So good!
Hereās what youāll need:
1 pack of lionās mane mushrooms š
1 tablespoon of butter š§
Your favorite BBQ sauce
White onion, sliced š§
Oakleaf lettuce š„¬
Microgreens (we used red rambo, but spicy salad mix would be delicious too!) š±
Brioche bun (itās best if you toast it š)
Hereās how to make it:
Shred your lionās mane mushrooms into small pieces and place them in a bowl.
Cover with BBQ sauce. Mix well. Let marinate for at least an hour.
Make sure your mushrooms are evenly coated with BBQ sauce before adding them to a non-stick skillet on medium-high heat.
Cook until mushrooms begin to caramelize and brown.
Serve on bun, topped with oakleaf lettuce, microgreens, onion, and maybe a little mayo or extra BBQ sauce!
**Tip: Cheese is a great addition to this sandwich. We like cheddar, but next time, weāre going to try some of the yummy cheese that Tres Bien Creamery has at the Farmerās Market! š
