Pulled Lion's Mane BBQ Sandwich

BBQ is the ultimate summertime meal, and while we are personally partial to chicken šŸ“, pork šŸ–, and beef šŸ„ , itā€™s always fun to try something a little adventurousā€“ like this BBQ pulled mushroom sandwich.

Lionā€™s mane mushroom is packed with nutritional content and is even showing promise as a potential treatment for degenerative brain conditions. Itā€™s also delicious. Itā€™s buttery and slightly sweet, and when you fry it up alone in a healthy amount of butter, they take on a mild seafood-like flavor. Some say it tastes like crab! šŸ¦€


Its flaky texture makes it perfect for shredding up, and the way it absorbs flavor makes it incredibly versatile, especially as a meat substitute. We recently tried it out for ourselves in the form of a tasty BBQ sandwich, and letā€™s just say we should have doubled the recipe. So good!


Hereā€™s what youā€™ll need:

  • 1 pack of lionā€™s mane mushrooms šŸ„

  • 1 tablespoon of butter šŸ§ˆ

  • Your favorite BBQ sauce

  • White onion, sliced šŸ§…

  • Oakleaf lettuce šŸ„¬

  • Microgreens (we used red rambo, but spicy salad mix would be delicious too!) šŸŒ±

  • Brioche bun (itā€™s best if you toast it šŸ˜‰)


Hereā€™s how to make it:

  1. Shred your lionā€™s mane mushrooms into small pieces and place them in a bowl.

  2. Cover with BBQ sauce. Mix well. Let marinate for at least an hour.

  3. Make sure your mushrooms are evenly coated with BBQ sauce before adding them to a non-stick skillet on medium-high heat.

  4. Cook until mushrooms begin to caramelize and brown.

  5. Serve on bun, topped with oakleaf lettuce, microgreens, onion, and maybe a little mayo or extra BBQ sauce!


**Tip: Cheese is a great addition to this sandwich. We like cheddar, but next time, weā€™re going to try some of the yummy cheese that Tres Bien Creamery has at the Farmerā€™s Market! šŸ˜‹
