Why have just regular, boring hashbrowns when you can have loaded hashbrowns? š
Think ācheesy fries,ā but itās for breakfast. Itās quick. Itās cheap. And itās DELICIOUS. Hereās how we like it:
What youāll need:
Idaho Spuds from Costco (a bit of a drive for those of us here in Havasu, but well worth it if you also need laundry detergent) š„
Avocado oil
Salt, pepper, and garlic powder to taste
Kerrygold butter
Cheddar and pepper jack cheeses (shredded) š§
Green onion
Cilantro
Tomatoes (preferably different types/colors)
Avocado š„
Lime juice
Feta cheese
Hereās how we made it:
Follow the instructions on the pack of spuds (youāll soak them in boiling water)
Heat avocado oil on frying pan on high heat
Drop one potato shred in. If it sizzles, add the rest. Add seasonings to taste and then panfry until golden brown. We like to add a bit of butter about halfway through.
Top with shredded cheese as soon as you put it on the plate. The heat from the potatoes should melt the cheese, but if you need to, you can always pop it in the oven on broil or microwave for a little to get it to melt.
Top with green onion, feta, tomatoes, avocado, a squeeze of lime over the avo, cilantro, and of course, your choice of microgreens. We used spicy salad mix here, but sunflower shoots and red rambo radish would both work great too!
**For next time: We want to try this with an eggā all that runny yolk soaking into the potatoesā so good! šš
